Dr. Shapiro's Apple Cake Recipe

Ingredients I
1 pound apples (2 large/4 small)
1 tablespoon sugar
1 teaspoon cinnamon

Ingredients II
1½ cup flour
¼ teaspoon salt
1¼ teaspoon baking powder
1 cup sugar

Ingredients III
½ cup cooking oil
2 eggs
2 tablespoons orange juice
1 teaspoon vanilla extract

Heat oven to 350°F. Grease and flour a loaf pan.

Peel the apples, cut them in quarters, cut out the cores, then slice the quarters into thinner pieces to make 32 slices total. In a small bowl, combine the tablespoon of sugar with the cinnamon. Set these things aside.

In a mixing bowl, combine Ingredients II, then add Ingredients III and mix well with a spoon to make the batter.

Spread half the batter in the loaf pan with a rubber spatula. Layer half the apple slices on top, then sprinkle half the cinnamon sugar over the apples. Repeat these layers a second time.

Bake the cake. After 45 minutes, stick a knife in it to see if it's done (mine usually takes over an hour). If batter sticks to the knife, put the cake back in the oven and test every 5–10 minutes. Enjoy your cake!
